A dead easy dish to make!
You will need for 8 people;
A jar of concentrated green curry paste (not the pour in sauce type)
tin of Butter Beansx2
tin of coconut milk
spudsx2
onionsx4
garlicx4 cloves
Butternut squash (large)
a block of concentrated coconut milk
fresh coriander
black mustard seed
hand full of peas
chop onions roughly and gently fry in hot olive oil with 2 tea spoons of onion seed (don;t burn}
peal, de seed and cut the BNsquash into 2cm cubes add to mix with chopped garlic, 2cm cubes of potato
, keep moving - dont let it stick - cook for3-4 mins.
add coconut milk,, drained butter beans, 0.25 of coconut cream block, 5-6 tea spoons of green curry paste, S&P to taste, peas and a heaped tea spoon of mild curry powder
bring to boil then turn low
simmer, cover, stir now and then (do not let it burn or stick to the bottom of the wok)
add more curry paste and powder to taste
Just b4 serving stir in chopped coriander
Each week I make a vegetarian soup for my wife Sharon and Mavis and Owen my Octogenarian in-laws. The ingredients of each soup depends on what's in the shops, my garden or the kitchen cupboard at the time! Mave and Owen have to try and guess the ingredients and Mave always asks, "Has it got a name?" So each week I will try and post details of the soup and a comment from Sharon, Mave and Owen. ENJOY!
